Stuffed Beef Shoulder Tender w/ Chipotle Sauce

Stuffed beef shoulder tender is a succulent and flavorful dish featuring tender cuts of beef, filled with a savory mixture of prepared horseradish, minced garlic, and fresh herbs. After being stuffed and tied with butcher’s twine, the beef is coated with wholegrain mustard and Oden's Kitchen Steak Seasoning. Grilled over hot coals to perfection, the beef is juicy and aromatic, with a beautiful crust. Paired with a rich chipotle beef dipping sauce, this dish offers a delightful balance of herbs and smoky flavors.



What is Beef Shoulder Tender?


Beef shoulder tender, also known as the teres major, is a cut of beef from the shoulder of a cow that's tender, lean, and juicy. It's shaped like a tenderloin but is smaller and more affordable.


Instructions:


1. Prepare the Beef


  • Trim and shape the tenders. When shaping, you may end up with small tips of beef from either end of the tender. Save these. They are perfect to season and cook along side the main dish, and serve as an appetizer or teaser to the meal.

  • Butterfly the Beef: Start by making a slit lengthwise down the center of each beef shoulder tender, being careful not to cut all the way through, to create a pocket for the stuffing.



2. Make the Stuffing:


  • In a bowl, combine the prepared horseradish, minced garlic, thyme, tarragon, rosemary, and Oden's Kitchen Basic Blend. Mix until well combined.


3. Stuff and Tie the Beef:


  • Stuff each tender with half of the herb-horseradish mixture. Press the mixture firmly into the pockets.

  • Use butcher’s twine to tie the beef tenders at 2-inch intervals, securing the stuffing inside.



4. Season the Beef:


  • Rub each stuffed and tied tender with wholegrain mustard, ensuring an even coat.

  • Sprinkle Oden’s Kitchen Steak Seasoning over the mustard rub, pressing it into the meat.



5. Grill the Beef:


  • Prepare the Grill: Heat the coals until they're hot and ashed over. Create two heat zones—one for direct heat and one for indirect heat.

  • Grill the Beef: Place the stuffed tenders on the grill over direct heat, rotating them every 2-3 minutes to ensure they are evenly browned. Don't forget to cook those tips you saved from earlier!

  • Once nicely browned, move the beef to the indirect heat side and continue grilling until the internal temperature reaches 125-130°F (52-54°C) for medium-rare, about 15-20 minutes depending on your grill.



6. Let it Rest:


  • Remove the beef from the grill and let it rest for 10 minutes. This helps redistribute the juices and finish cooking.


7. Make the Chipotle Beef Sauce:


  • While the beef rests, prepare the sauce. In a small saucepan, melt the butter over medium heat.

  • Add the beef broth and bring to a simmer.

  • Stir in the Oden’s Kitchen Basic Blend and chipotle puree, simmering for another 1-2 minutes until the sauce thickens slightly and is well combined.

  • Adjust measurements as needed.


8. Serve:


  • Slice the stuffed beef shoulder tender into thick slices, removing the butcher’s twine as you go.

  • Serve with the warm chipotle beef sauce on the side for dipping.

Note: This recipe can be used with a traditional 2-3 lb beef tenderloin :)

Stuffed Beef


  • 2 beef shoulder tenders, 1 lb. each. (Optional use a 2-3 lb Beef Tenderloin)

  • 3 TBSP prepared horseradish

  • 1 TBSP minced garlic. Approx. 6 garlic cloves.

  • 1 tsp fresh thyme, chopped

  • 1 tsp fresh tarragon, chopped

  • 1 tsp fresh rosemary, chopped

  • 1 TBSP Oden's Kitchen Basic Blend

  • 2 TBSP wholegrain mustard

  • 2 TBSP Oden's Kitchen Steak Seasoning

  • Butcher’s twine


Chipotle Dipping Sauce


  • 2 TBSP unsalted butter

  • 1/2 cup beef broth

  • 1 TBSP Oden’s Kitchen Basic Blend

  • 1 TBSP chipotle puree or diced chipotle peppers (adjust to taste)
